200ml recently pressed lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, serving 10)

Method

Making the Cordial: Combine every items inside a pan, bring to a gentle boil, stirring until the sugar dissolves. Then, remove from the heat and leave to cool completely. Pour into a sealable bottle, seal and store in the refrigerator, where it will keep for around four weeks.

For the Cocktail Base: Mix all the liquid ingredients in a big jug, allow it to infuse for one hour, then strain best through muslin, making it perfectly clear.

To serve: Add 85ml from the cocktail base into your stirring glass filled with ice, gently stirring lightly for about 60 seconds until cold. Filter into a cold coupe glass or a similar vessel, garnish with the cranberries and finish by giving it a light spray of the essential oil over the top.
